Incorporate meat if you wish
(For a QUICK AND EASY pie crust, mix 1 cup (whole wheat) pastry flour, 6 tbsp. vegetable oil, and 3 tbsp. cold water. Press into pie plate.)
1 9” pie crust
3-4 eggs
1-1/4 cups milk
2 tbsp. flour
1/4 tsp. salt
1/8 tsp. black pepper
Fresh chopped basil or other herbs
Filling suggestions:
Sautéed onion and garlic
Sautéed mushrooms
Sautéed bell peppers
Fresh spinach, chopped and wilted
Sliced fresh tomatoes
Grated cheese (Cheddar, Jack, Swiss, etc.)
Chopped cooked broccoli
Chopped green onions and green chiles
Grated zucchini, squash, and/or carrots
Avocados
Choose your fillings (use anything you like – this is a time to be creative). Place 1-1/2 cups of filling into the pie crust. Mix eggs, milk, flour, and seasonings with a whisk. Pour over filling and bake at 375° for 45 minutes or until pie has set.
